Cole Slaw - Great for Pork Sandwiches

A Southern pulled pork sandwich is not complete without cole slaw.  This great recipe finishes off the meal, or serve as a side. Either way you'll get compliments.  It's just as easy, and better tasting, as that bagged stuff from the grocery store.


My preference in cole slaw is toward less vinegar, so this recipe has about half the usual amount of vinegar.  You can increase the amount of vinegar if you prefer.And remember, recipes are starting points.  You can always adjust proportions, especially the mayonnaise.

Ingredients for 8 good size servings:
2/3 head green cabbage
1/3 head red cabbage
1/4 cup finely chopped carrots
1/2 tsp salt
1/2 tsp fresh ground black pepper
3/4 cup mayonnaise
1 Tblsp sugar
2 Tblsp balsamic vinegar

Chop cabbage coarsely with a sharp knife.  It's important to chop the cabbage, not crush it.  Mix everything else in a mixing bowl and then add cabbage.  Toss really well, and refrigerate for at least an hour before serving.
