Magic Chicken Marinade
This is a great marinade for chicken, created from years of experimenting with marinades from around the world. I consider it a basic oil and vinegar marinade, but it really gives chicken a great flavor and juiciness.
This is enough marinade for 8 pieces of chicken (4 breasts split or 4 legs and 4 thighs).
1/4 cup Balsamic vinegar
1/3 cup wine vinegar
1/3 cup olive oil
1/4 cup dried Rosemary
2 Tblsp dried Marjoram
2 Tblsp dried Tarragon or thyme
1 tsp sea salt
1 tsp fresh ground black pepper
Mix ingredients together in a bowl. Place chicken pieces in a gallon size zip-lock bag. Pour marinade in the bag and mix well with the chicken. Place in refrigerator for a few hours up to a couple of days, turning occasionally. Cook on grill, broil or bake. Cook the chicken ONLY until it is 165F internal. Do not overcook the chicken!
