Sausage on the smoker

Use any type of link sausage -- pork, brats, etc.  I especially like Aidells brand Chicken and Apple sausage from Costco - they have a drop of spice along with the sweet taste of apple.
Slice the sausage length wise and smoke at 225 up to 30 minutes and then increase to 350 for 10 minutes.  If the sausage is pre-cooked (like Aidells) you are just re-heating to get the smoke flavor.  If the sausage is raw, cook until internal temperature of 155.
