This is a great bean dinner and works amazingly well as a side dish for Barbecue meals. Fairly easy to prepare and a great option to baked beans!
The recipe uses canned beans but if you enjoy cooking and have the time, use fresh dried beans and start from scratch. The 2-can recipe will serve about 10-15 side servings or 5-8 main meals.
Ingredients
2-3 cans (15 oz) black beans
2-3 cans (15 oz) other beans (Navy, Pinto, Canelini, Kidney, etc. (But white beans look best)
2-3 cans (15 oz) tomatoes - diced
2 fresh tomatoes, diced
2 onions, diced
1 green pepper, diced
Some basil, tarragon, ginger, as desired
A little bit of cayenne or red chili pepper (be sure to add this, it's important)
3 large cloves garlic, diced
Sea Salt and fresh ground pepper, to taste
Directions
Drain the beans and the canned tomatoes (save some liquid for the pot). Put everything in a pot and cook on low for at least 30 minutes.
If serving as a main meal: Serve over rice, add french bread and a glass of wine for a healthy survival kit. This is fat free.
