Mustard based sauces have a definite kick to them, and this one is no exception. On the other hand, the pure Vermont maple syrup adds a sweetness and character that gives the sauce a great balance of savor, sweet and heat.
This sauce is delicious and really compliments pulled pork and ribs nicely. I usually double or triple the recipe and keep it stored in the refrigerator.
Ingredients:
1/2 cup yellow mustard
1/2 cup Dijon mustard
1/2 cup balsamic vinegar
1/2 cup Vermont maple syrup
1/4 cup brown sugar
2 tablespoons butter
1 tablespoon Worcestershire sauce
1 tablespoon lemon juice
1/2 teaspoon cayenne (use more only if you want a hotter sauce)
Mix all ingredients together and simmer over a low heat for 30 minutes. The sauce will thicken during the cooking process. Be sure to stir occasionally and strain the sauce after cooking to ensure a smooth consistency for serving. One recipe will make about 12 ounces of sauce.
